Chicken Fried Steak

1 lb round steak one inch thick
Flour
Pepper
Salt
Lard, Shortening, or bacon drippings for frying

Cut the steak into portions of desired size.   Pound well with a wooden mallet.   Sprinkle liberally with pepper and salt, dip in flour .   Let stand a few minutes while fat is heating over medium heat.   The meat will be damp on the outside; dip again in the flour and rub well into meat.   When fat is very hot, drop the steak in and fry carefully until golden brown all over.   Reduce heat and finish cooking to any stage desired; rare, medium, or well done.

Variation: Fry in ˝ fat and ˝ olive oil.   Add other spices to taste, if desired.

Top with your favorite sauce or gravy… or not….enjoy!
