Remember Joy Young's in Birmingham? It was excellent Chinese cuisine served by waiters who were not Asian. There Americans flocked to eat things that were out of the ordinary. This is an authentic recipe from Joy Young's, published in Alabama's Best Restaurants Cookbook" by Jon "McClure in the section entitled, "Gone, But Not Forgotten." We're having this for lunch.


2 cups bok choy sliced
1/2 cups water chestnuts
1-1/2 cups fresh pea pods
1/2 cups sliced celery
1/2 cups peanut oil
1 cups bamboo shoots
1-1/2 cups sliced mushrooms
2- 6 ounce chicken breasts thinly sliced into strips
soy sauce to taste

Stir fry chicken in wok or skillet with 1/2 c peanut oil until chicken is white throughout. Add other ingredients and stir fry until done. Season with soy sauce to taste. Also good with white sauce or Hunan sauce. Makes 4-6 servings.
