STRAWBERRY COBBLER
1 quart thawed sweetened strawberries
juice from berries
3/4 cup sugar
3 tablespoons corn starch
3 tablespoons butter
1 cup flour
3/4 cup sugar
1 teaspoon baking powder
1/4 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla
1 egg
Drain juice from thawed berries and reserve. Measure juice and add enough water
to equal 1 cup.
In a saucepan, combine sugar and cornstarch. Gradually add juice. Bring to a
boil and stir until mixture has thickened. Stir in butter; allow to cool. Add berries. Pour into 9 x 13-inch pan. Beat
remaining ingredients for 4 minutes; pour over fruit.
Bake at 350°F for 35 or 40 minutes or until done.
Cool.
